RL140526 Lecture 9: Proteins

Staring at the computer screen for a solid 20 minutes, typing words and deleting it. Okay, I have a confession to make, I didn't know what to write for this week's reflective, plus I almost forgot to write this too.. *sheepishly hiding myself away* Yeah, not sure for what reason, this week, I wasn't really in a focus mode, I found it hard to concentrate in class. It's not about the tight schedule (in fact, this is the free-est I've had in this semester) , or even about the uncompleted assignments other classmates are worrying about (I've completed mine way looong before the holiday ends). Anyway, there's nothing to dwell into, and I shall move on and get going...

RL140526 Lecture 9: Gluten, nothing to be afraid of...
We started a new chapter on proteins. Dr. Chong forgot to upload the notes, and I didn't remind her too.. my bad.. Felt kinda uneasy as I didn't have a hard copy to refer to when I needed to jot down some notes. But I think this is a better way for me, as there will be less distractions, so I'll pay full attention during the class, and I could remember better too. So now, it's time to test my memory and understanding, let's recap on what we've learnt: *I've not printed the set of notes yet so I've nothing to refer to

The focus of the lecture was on gluten: What makes wheat flour unique and different from other flour is gluten? It is the protein network formed from the interaction between wheat storage proteins (gliadin & glutenin) and water, when kneading is introduced. As gluten develops, it gives structure and chewiness to the product. In other words, wheat flour technically contains no gluten if it has not been interacting with water AND kneaded. Hah! Smell something fishy? Who knows how would some unethical manufacturers label their normal flour as gluten-free, and get away with it? Awareness, guys! Though I'm at total opposition of this whole "gluten=toxin" mindset (the power of marketing and consumer's ignorance, once again), it still matters for those who are allergic to gluten. 

Gluten free products are getting more popular in Asia, thanks to the influence from the West.

What's the big fuss about gluten anyway? In case you haven't known about the relationship between celiac disease and gluten, you can read it here. Though it can be quite fatal, it's not a prevalent disease in Asia, so why care about that when gluten has so many usage in food, especially when the staple food in Asia very much depends on it? Trust me, a gluten-allergic can't survive in Asia, cause gluten is everywhere...

So, as you can see, gluten is not only important in making bread, as most of us understood. It also plays important roles in all kinds of wheat flour products. Different composition, ratio of gliadin to glutenin, and processing method also affects the performance of flour. Low protein flour are used to make cakes and biscuits, medium protein flour are used to make noodles, pastries, etc, while high protein flour are used to make bread. While the gluten network in breads is formed by kneading, the one in noodles/dumpling wraps are formed upon resting. This gives a difference in the texture, whereby the one bread is more nicely formed, thus, higher elasticity, and the one in noodles are more compact and not as elastic. However, the springiness of noodles can actually be improved by adding lye water. 

Vegetarian meat is also mostly made of gluten. It's even the protein source for vegetarians...

All in all, gluten a very important protein structure in determining the texture of wheat flour products. It needs water and kneading to develop, while the way it forms can be manipulated by different processing methods or additives, or simply using different kind of flour. Gluten is just as common as rice to us. Just stop this whole gluten-paranoia already..

RL140512 Lecture 8: It's all about sense

Week 8! Can't believe I survived this. Looking back, I actually didn't do much, but why did I feel so exhausted and worn by assignments? LOL! anyway, I am super excited as I'll be sleeping soundly in my warm blanket, in the city of cats, in 3 hours time. 

RL140512 Lecture 8: Equipped with his five senses, man explores the universe around him and call the adventure Science. 
A little story about me before I proceed with this week's reflective learning. Not to sound boastful, but since small, I was always told how was I gifted in my five senses. I can taste and smell the ingredients used in a certain dish and reciprocate the taste quiet accurately. I can recognise relative pitch and easily detect the difference between two notes. But I felt I kinda desensitise myself over the years as I don't really utilise these senses. *oops* Anyhow, because of this, I've always considered sensorial scientist (other than food critique) as one of my future occupation. Smelling perfume everyday, telling the aroma, or tasting wine describing the taste, age, etc etc. though I wasn't even sure if these kind of occupation really existed. 


Okay, back to the topic, this week's lecture was about sensory evaluation. While in our module, this test is mainly a subjective test, it has a whole lot of knowledge behind. In addition, there's this discipline called sensory science, where they objectify qualities into quantity and develop methods and systems to measure the different qualitative aspects, so to generate and analyse the data collected. But that's not the concern for this subject. In experiment food and practices, the purpose of conducting this test is more important. 

So, there're 3 kinds of test in sensory analysis, namely the descriptive test -- to describe the sensorial quality of the test samples, hedonic test -- to know the liking of respondent towards the food sample, and the simplest of all, discriminative test -- to tell whether there's any difference between the test sample. Most of the time, the tests might not be solely conducted in one form, but a combination of three. The first test, descriptive test needs a panel of professional panelist to come out with description of the test samples, while the other two is easier to be conducted whereby any Tom, Dick and Harry can take part in. However, wherever public is involved the sample size has to be at least 60 to gather reliable data, and the panelist should be isolated and remain neutral on the test subject to prevent biased results. 

So, what's so important about sensory test and why shall we conduct the test? See, this is a profit oriented society. Companies don't invest in something that would make a lost. In this food industry, customers/consumers brings in revenue. So, we must satisfy their needs/wants to ensure they buy your product. So, to know what they want, we must at least conduct sensory test to know if our product suits their liking. One might argue, "forget about the taste, marketing can do the job." Oh, marketing again... =/ While I don't deny the power of marketing, I still think quality is still the very criterion to a successful food product. I, for one, will not be willing to spend on something that I found uninteresting and tasteless, or just some flavoured food that has no 'actual' ingredient at all. *coughs* some international snacks/drinks franchise *coughs* So, yeah, market study is still important, and that's why sensory evaluation has such high value in the food industry. Look at Nestle, they have a department only doing sensory test!




So yeah, see how important sensory test is? I better buck up myself and come back to my senses now. *pun intended*  I think I'd one day venture into this. Now that we're talking about senses, I can already smell the aroma of tomato kueh tiao already. Wolf in the Dangerous World 危险世界的“狼”



最近,才子方大同韦礼安不约而同发新专辑,我也不禁把两张专辑拿来比较。后发现两张专辑竟是如此连贯。脑海中忽然浮出这画面的我就迫不及待地把它画下来。

在我作画的同时,飞来一道晴天霹雳的消息--首相宣布失踪多日的MH370在印度洋坠毁,幸存者为0。罹难者的家人是何等心情,我完全无法想像。当媒体都在抨击大马政府这种“不负责任”的行为的时侯,台湾政府强制驱离反服贸协议的民众,无视司法程序的行为又是有多负责任。当然,这也只是我单方面的看法,相信马/台政府也是经过多方考虑才下的决定。但人们最终只愿意选择相信自己想听的。

在我看来,在这乌烟瘴气,人心险恶,危机重重的危险世界里,人们为了保护自己珍惜的一切,不惜付出任何代价。而这种种行为却使人不自觉地变成了“狼” *pun intended*。

然而,狼的内心又有多少恐惧?对改变/未知的恐惧,对于贪念的恐惧,对于爱无法及时传递的恐惧,对于自己处于绝望时代的恐惧。为了逃避、掩盖这些恐惧,人们选择伪装成狼。最终发现,互相伤害的大家都只不过是披着狼皮的一群迷途羔羊。

所以,大家可不可以脱掉那层狼皮,脱掉伪装,与恐惧正面突破,真心对待每个人事物,把这危险世界变成美好世界?

真心期待这一天的到来。

Revival of the long abandoned blog


So yeah, here am I, after a 2-year 4-year lapse (*gasps* where have the time gone!), I'm back to Blogger. I was tidying up my G+ profile when I recalled the existence of this blog. Oh the nostalgia revisiting this blog brings me.. I could still remember how reluctant was I back then when my English teacher 'forced' us to keep this English blog as a journal, hence the pathetic 3 posts below which I was forced to write, LOLs! Yeah, it does seem pathetic, doesn't it? Haha, anyway, I decided to pick up blogging again (this time truly on my own will *wink*). I'll be sharing my thoughts on things I found interesting, though I can foresee myself ranting about the most random thing or swooning over that hot k-drama villain here in this blog. LOL! So hope you enjoy reading my blog and hopefully this time I could make it a habit to constantly blog..

My Pledge to the Mother Earth



Our mother earth is sick. She is seriously sick. She suffers from high fever and shows no symptoms of subsiding. This is all because of the humans activities. Because of this, many side effects are caused. For example, our mother earth suffer from respiratory problems because of the smoke emitted from factories and vehicles. As a result, she throws her temper on us as a warning. This is why natural disaster is getting more and more severe and unpredictable.

Therefore, many worldwide organisations has held various activities to 'cure' our mother earth, such as the World Climate Conference carried out by the World Wildlife Fund (WWF).

Although I can't contribute much on these activities, I am very conscious about this matter, because we, humans, residents of the earth have the responsibility to protect our environment. Hence, I pledge I will give in all my efforts to protect our mother earth.

The first thing I'll do is to reduce the usage of non-biodegradable products such as plastic bags and polystyrene lunch box. Next, I'll also try my very best to reduce the usage of electricity in order to save our natural resources and reduce the emission of greenhouse gases. Then, I'll also try not to use air-conditoner to reduce the usage of chlorofluorocarbon (CFC).

I hope by doing this, our mother earth will get well soon.

Duan Wu Festival

The 'Duan Wu' festival or simply rice dumpling festival (as we used to eat dumplings to celebrate the festival) is celebrated on the 5th day of the 5th month on the lunar calendar. I'm sure that every Chinese is very familiar with the story behind this festival, which is to commemorate the patriotic poet, Qu Yuan who committed suicide as an act of patriotism.

As we all know, eating rice dumplings and dragon boat racing are the common activities practised on Duan Wu festival right here in Malaysia. In Kuching, dragon boat racing is held at the Sarawak River in conjunction with the celebration of this festival. I also like to eat rice dumplings. I love the dumplings stuffed with chestnuts and mellon sweet. It is one of my favourite food. However, in Taiwan, other than those practices, there's an unique activity going on that particular day which is 'li dan' which means "egg-standing". It does not carry the meaning of "standing on an egg" but it means "making an egg to stand". Sharp at 12 noon, people will go outdoors and "stand" the egg under the sun. Don't be surprised, the eggs stand upright!! The Taiwanese had broken the Guinness World record by standing 1972 eggs in year 2005. Some Malaysians do also practise this tradition but it is not as common.

The Koreans also celebrate this festival. For your information,the Gangneung Danoje Festival(Duan Wu festival in Korean) is a national event that was even acknowledged as a Masterpiece of the Oral and Intangible Heritage of Humanity by UNESCO. However, the Chinese were very mad when this festival was declared as the heritage of Korea as the Chinese claim this festival originated from China. Although the festival falls on the same day, the purpose of celebration is a little different.The Dano festival is a sacrificial ritual to the spirits of agriculture, heaven and mountain, in celebration of the end of sowing season. The Koreans also eat rice cakes on that day. They play traditional folk games on that day. One of the games is the traditional Kune (Korean swing). The special thing about this swing is the Korean will not sit on the swing but stand on the board to swing. What an exciting way of playing a swing!

My First "Blogging" Experience..

Finally, for the first time, i have my own blog (though I was not so happy about it.. haha!). I never expected that I would have my own blog because I have always been lazy to manage these things and I am not the kind who likes to share. That's why I was very reluctant when my English teacher asked us to create our own blog. My teacher had considered that some of us may not have Internet connection at home. So, she brought us to the computer lab to create our blog. I appreciate her effort because if not, I might have just ignored her instructions. However, the Internet connection at school was so slow that I almost gave up! We also had to share the computers because there are limited computers. This had caused total chaos in the computer lab as we kept running around the lab to look for the computer with a better connection. However, everybody managed to create their blog at the end of the period. What a memorable experience...
